Key Lime Pie (Karin Devendorf) (Cindy Olivier)

1 (14-oz) can sweetened condensed milk
1/2 cup bottled (or fresh) Key lime juice
Zest of 1 lime (optional, but adds more zing!)
2 egg yolks, slightly beaten
1 ready-made graham cracker or shortbread crust
whipped cream or Cool Whip

1. Preheat oven to 350 degrees. In mixing bowl, combine condensed milk, lime juice and yolks. Beat 3 to 4 minutes.

2. Pour into pie crust. Bake for 8 minutes.

3. Remove from oven, cool, cover and chill for 3 to 4 hours. Top each slice with a dollop of whipped cream or Cool Whip.

Cindy says she got this recipe in the newspaper years ago. It's really good. She made it for us when they visited, and I just made it again yesterday. Give it a try! So easy!! Feel free to share some of your favorite recipes with the rest of us. Guys -- if you cook you can share with us as well.

For your Mexican food cravings (Darlene McCloud)

Sweet Pork

Cook in crock-pot on high about 5 hours:
3 lb pork loin
Shred with 2 forks and return to crock-pot with the following:
1 can Coke or Sprite
1/2 to 3/4 c. brown sugar
1 can green chilies-diced
1/2 pkg. fajita seasoning mix
1 Tb. Taco seasoning
minced garlic to taste
Cook an additional 3 hours on low. Serves 12-15.

OR -- just put everything in the crockpot and then shred the pork when it's done.
You can let the pork cook in the crockpot while you're driving -- carefully. Just put the crockpot in the sink!

Lime Rice

In a fry pan, sauté the following:
2 Tb. Butter
1 yellow onion-chopped
4 cloves garlic-minced
In a large pot bring the following to a boil:
6 2/3 c. water
8 tsp. chicken bullion (or cubes)
1/2 bunch cilantro-chopped
2 tsp. cumin
2 small cans green chiles-diced
1 Tb. Lime juice
½ tsp. salt
Add the sautéed onion and garlic, then add
3 cups long grain rice.
Reduce heat, cover and simmer for 30 minutes. Cook up to 15 more minutes until all liquid is absorbed. Serves 25 unless they eat a lot of rice!

OR -- throw everything in a rice cooker (adjusting for the right amount of liquid).

Creamy Tomatillo Dressing

Put all ingredients in blender and blend until smooth:
2 or 3 tomatillos (remove husk and dice)
1 pkg. Hidden Valley dry Ranch Dressing mix
1 c. mayonnaise
1 c. buttermilk
1 c. fresh cilantro
1/4 tsp. cayenne pepper
2 cloves garlic
Jalapeno pepper, if desired. (Remove seeds for less heat)
Juice of 1 lime, if desired.

I use a serrano pepper (less heat) and I do use the lime juice as well.

Serve the above with tortillas, shredded lettuce, grated cheese, tortilla chips, drained black beans, salsa, guacamole, chopped tomatoes, etc. People can make their own burros or taco salad or any combination they prefer.

Crunchy Ice Cream Balls
“Fried” Ice Cream without the “Fried”

1/2 c. firmly packed brown sugar
1/4 c. butter
2 tsp. cinnamon
3 c. crushed cornflakes
Vanilla ice cream

Melt butter, add sugar and cinnamon. Stir until well blended. Stir in cereal, spread on cookie sheet to cool. Crumble and store in air-tight container. Roll vanilla ice cream balls into the mixture. Refreeze these until ready to serve. Serve with chocolate, caramel, or strawberry sauce or fresh strawberries. Top with whipped cream and a cherry.

Over rice with a side salad. Tom thought I was nuts. It's delicious both ways though.
I signed Cindy up but she hasn't had time yet to get on. Gotta go nudge her again.

Georgia's Company Salad

INGREDIENTS AND INSTRUCTIONS

Romaine Lettuce
Porta Bella Mushrooms
Cherry Tomatoes
Cucumber (Italian)
Green Grapes
Carrots
Chicken
Celery
Walnuts
Pecans
Sesame Seeds
Butter, Nutmeg, Cinammon, Powdered Sugar
Homemade Chili Oil
Blue Cheese
Sharp Cheddar Cheese
Dubliner Irish Cheese
Rembrandt Extra Aged Gouda
Romano/Parmesan Cheese
Dried Cranberries
White Onion
very thin chicken breasts (almost a veal cut) May have to have butcher cut for you.
Raw Honey
Lemon Pepper Marinade
McCormicks Salad Seasoning
Black Olives

Dice all fruits and vegetables. Place separately in zip lock containers if preparing ahead of time.

In skillet, pour 2 tbls homemade chili oil and heat. Place chicken breasts in skillet. Saute until done. Place on paper towels to absorb oil. Put aside to cool, then place in zip lock bag. Chicken can be grilled, then added.

Heat skillet with 1-2 sticks of butter. Add chopped walnuts and pecans, as well as sesame seeds and honey. Stir until well blended. Add cinammon and nutmeg to mixture. Place on foil to cool. If time permits, may roast in 300 degree oven for 10 minutes.

To arrange salad, place all vegetables in salad bowl. Add chicken, nuts. Add seasonings, then all cheeses. Toss until thoroughly mixed.

Add salad dressings of choice and serve.

I can personally attest that Darlene's recipes are out of this world! If I ate at Darlene's very often, I would definitely have to begin marathon training - she is the best!

An aside, Michael got me a Groupon that is superb - a year-long on-line video course for Top Chef University - what fun!!!
