It ended up being a warped/dented dish causing the problem. Took several hours to diagnose and less than five minutes to fix. Ugh. Apparently if the dish is not uniform in certain spots it scatters the signal enough to mess it up.
I'm thinking a storm must have caused a tree limb to hit it and we just didn't realize it. We don't watch tv sometimes for weeks at a time so wouldn't have known right away.
