Gentleman,

Is it possible to by-pass the hot water heater in the aqua hot and add an 8-gallon water heater to the system?
I have found a water leak coming out of the Aqua-Hot when I turn on the water pump.

Yes, it's possible. The potable water flows through a series of coils wrapped around the burner chamber It's completely isolated from the rest of the system.

Possibly you have a leak in that coil. Many folks have had issues there. I did not get a previous coach well winterized and had a frozen coil, resulting in a leak.

Some have repaired the coil. Some replace the unit.

Installing an external water heater is also an option.

You might want to look into the double walled flat plate heat exchanger that many solar installs use for hot water. The way this would work is the hot water loop goes through the exchanger and you take one of the heater loops from the AH through the other side. The disadvantage is that you have to engineer how to activated one of the circ pumps when you need hot water. The advantage is that you retain the AH for coach heating, engine preheating, and coach heat while under way. Also it will be way easier to execute that pulling out the AH and replacing with a marine style hot water heater.

What Richard said. You can put a small circulation pump which is used in Mercedes Benz cars its 12v and made just for that function.
